  • Pork ribs 1.4 kg
  • Red wine 750 g
  • Extra virgin olive oil 80 g
  • Shallot 100 g
  • Rosemary 6 sprigs
  • Salt to taste
  • Black pepper to taste

FOR THE ACCOMPANYING SAUCE

  • Tomato sauce 250 g
  • Tomato concentrate 10 g
  • White onions 80 g
  • Garlic 1 clove
  • White wine vinegar 60 g
  • Brown sugar 50 g
  • Mustard 50 g
  • Fresh chilli 10 g
  • Extra virgin olive oil 60 g
  • Worcestershire sauce 10 g
  • Tabasco 10 g
  • Salt to taste
  • Black pepper to taste

HOW TO PREPARE GRILLED RIBS?

To prepare the grilled ribs, start by preparing the marinade, which will serve to flavor the meat and make it more tender and tasty. In a low and wide bowl of sufficient capacity pour the wine, and then add the cleaned and coarsely chopped shallot and the whole rosemary sprigs.

Now cut the ribs and place them in the marinade, taking care to dip them well. At this point add the extra virgin olive oil.

Finally, mix again to mix all the ingredients. Remove the sauce from the heat and filter it with the help of a spatula and a narrow mesh strainer.

Your sauce is ready: transfer it to a small bowl. After 2 hours of rest, drain the ribs from their marinating.

Storage

Freshly cooked ribs should preferably be consumed. You can keep the raw meat immersed in its marinade until ready to cook, covered with plastic wrap. The accompanying sauce can be kept in the refrigerator in an airtight container or covered with the transparent film. Freezing is not recommended.

If you prefer, instead of ribs you can use pork chops! In this case, the marinating time will be about one hour at room temperature. If you prefer to use fillet, roast or other large cuts, it will be enough to increase the marinating time up to one or two days: so the flavors will have plenty of time to penetrate the meat and make it tender and tasty!
